Steam-driven espresso machines operate by forcing water through the coffee grounds using steam pressure. Water was boiled at 100C (212F) or above to create steam. Because of the increased pressure created by the phase change, the steam in the chamber forces the steam through the ground coffee beans. The pressure, 1.5-3.5 ATMs (atmospheres), forces the steam through the finely ground coffee beans.
Coffee experts say approximately 9 ATMs are required to force the water through the finely ground and densely packed coffee, which is normally found in pump-driven espresso machines. The temperature of steam driven machines is often too hot for espresso brewing, which may scald the coffee and create a bitter-tasting espresso for many. Lowering the temperature would produce less pressure and under extraction of essential flavor. High temperatures produce over extraction.
Nevertheless, many purists will only drink espresso from a steam-driven espresso machine.
